Is there anyway (newsletter, anything) to be notified of updates to core and contributed modules? I've subscribed to the security newsletter and that helps but there are so many updates to contributed modules that just slip under my radar. Any ideas?

Try the RSS feeds
You should try the RSS feeds for the modules that you are concerned with, or if you want all of them you can watch this feed: http://drupal.org/cvs?rss=true.
Just the core messages can be found at http://drupal.org/cvs?rss=true&nid=3060.
These feeds will show all the CVS commit messages. This may be overkill for you, but it will work.
For me, I watch the http://drupal.org/project/modules/date page, and see if any of the module I am interested are updated.
notifications for releases
if you want to be notified when there are new releases (not just individual cvs commits) for core and contrib, you should support the new system for releasing Drupal contributions.
