I notice in default values I can set the first row as header.

If it is set there, could we have it appear as uneditable on the content type editing screen? :)

I have been thinking of this further and perhaps an option to
"disable users changing default header row" would be great and output first row as thead not just on node view but on node edit too. :)

In D7 and 8 we have a permission that limits changing default values.

Closing as "Won't fix" because the Drupal 6 version is unsupported and the issue doesn't seem to appear on Drupal 7 or 8. If you believe it does, feel free to reopen the issue and change the version as appropriate.

Of course you can also reopen the issue if you provide a patch that fixes the issue.
