I plan to use Drupal for a portal like website which will operate for roughtly 500 to 600 users to being with. These users will be accessing the Drupal website about 3-4 times per day; So they might spend about 30-45 minutes per day accessing the website. I am trying to either locate a host which could handle this load and be scalable so that we can continue to add users.

I currently have 2 VPSes which I am not using and am considering using for this project. I have been told that Drupal is mySQL intensive so I thought about using VPS1 as a mySQL server and VPS2 as a Web Server. Is sticking the MySQL Server and Web Server on seperate servers alright? Think it might have a major cutback in performance? Or should I just put everyone on the same VPS? (Both VPSes are on seperate nodes).

It sounds like you have not started the project yet. I would start with shared hosting and then move your way up as you start to expand. Stay within the cPanel platform and it'll make your life easy to migrate from host to host, or service to service.
