I could use a basic tutorial, just a 1, 2, 3 of how to set this up.

I have configured a menu and tried every combination I can think of but my taxonomy pages never show any way to filter them on the other taxonomy. I am missing something very basic, and I notice that there is no handbook page for this module. I would be happy to help write one, if someone will get me started on how it works!

you can try taxonomy browser module to select and display taxonomy from 2 or 3 taxonmy terms or using the path taxonomy/term/2+3 in the menu, if your looking for advanced options get views module.
