Is there a way to get your site to just register/login using your email address with no mention of a username? Thanks.

Try the LoginToBoggan module. It drastically improves Drupal's login and registration functionality and includes the ability to:

Allow users to login using either their username OR their e-mail address.

LoginToBoggan is good, and I use it on my site, but does it give you an option to remove all mention of a username?

Not that I'm aware of.

Wish I could offer a solution, but I'm new to Drupal and have had very little experience with it. I do know that the LoginToboggan module will allow your users to log in with an email address, though, which is close to what you're asking.
