I have Ubercart installed along with the quotes module.
I also have taxonomy installed with vocab and 2 terms within the vocab for Ubercart.
When I go to create product or edit product, I do not see the selection menu in which I can add or delete the vocab terms (categories).
I had this setup before, but for some reason I can no longer find the menu.
You will see that I do have products listed under the vocab terms, but I cannot change or add any more products due to this problem
I will give $15 to anyone that can take a look at AND do whatever it takes to make it so I can select which category my products end up in.
I did have a post on Ubercart forum, but then I found out that my "quotes" module (which shows random testimonials, tips, and site facts, also has the same problem. I cannot change or add which category my "quote" ends up in.
Some notes...
I DO have 'product' and 'product kit' selected under edit vocab.
Also, under Taxonomy "product", edit fields you can see that taxonomy is supposed to show up.

Maybe you you lost Catalog settings, I think the first thing to do is entry in Catalog settings admin/store/settings/catalog and select Catalog vocabulary (your like taxonomy).
Additionally could be many things, from permissions role until a module hiding this.

I do have another vocab I was using and was chosen under admin/store/settings/catalog (ACP Online Store was what is setup under taxonomy and chosen under admin/store/settings/catalog).
The ACP Online Store had 2 terms under it
I also set up a 'test' using Catalog as a vocab just to make sure that you didn't have to choose catalog.
Permissions are set for admin to administer catalog
