I'm using the Admin module with the Rubix theme for my admin pages. I really like the improved menu but prefer the old 1.0 admin theme. Is it possible to use that theme with version 2.0 instead of Rubix or Cube?

Yes, you can use any theme with Admin 2.x. A backport of the Drupal 7 admin theme is available at http://drupal.org/project/seven.
