When I upload images that have been modified by Adobe Lightroom, the data goes in fine. However, image from Apple Aperture, or several other apps is not imported into my node fields.

I've print_r()'d many of the vars ($data from line 109 in exif.module), but they are coming out empty.

Most strange, is that fact that I can see all the data on /admin/settings/exif/general.

It seem that the functions that read the data for the admin display are different than are used to import that data.

Any help here?

could you maybe post two pictures, one with aperture and one with lightroom, so we can test this.
