Just began trying out Drupal CVS. When the stable version comes out, will I be able to update the CVS version?

The answer is simply: maybe. From personal experince, I would suggest against starting to build any sort of real site until at least RC1. We're not even at the beta stage yet, so the shema may yet change, and there may or may not be a clean upgrade path from the previous (alpha) schema.
