Is there a published document with the table relationships and their descriptions? I've only found: http://drupal.org/node/161100 which is deprecated and doesn't give much info.

Schema Module
The Schema module, http://drupal.org/project/schema, describes a lot of the relationships between the Db tables. Also you could have a look at the Schema API http://drupal.org/node/146843 about how it it put together
