how can I use EUR (€) for paying shipping and points for the product?

I would suggest looking at the userpoints discount portion of the module. This should allow the user to discount the order up to the price of the product (yes I know there are issues with not using floating points). Then you would be left with tax, shipping, etc to be paid for via another means.
