Is there a module or solution for a simple mailing list signup?
The goal:
To generate a simple mailing list without registering as a user.
The method:
To have a small form (block) that asks for name and email address which will then be stored in a simple mailing list.
It doesn't seem like Simple News supports this because it doesn't provide a form to enter your information. It just assumes that you're a Drupal user. This is not really a newsletter. I just want the functionality to populate a mailing list for those that are interested in doing so.

http://drupal.org/taxonomy/term/66 = I'd start with the ones listed here and test them on a test site. Drupal.org using mailinglist manager. (I think)
No, I don't think so
That doesn't seem to be what I'm looking for. The module you recommended logs all email sent from the website. I don't need to log the emails. I just need to store people's names and email addresses for future mailings. They should be able to just enter a name and an email address to sign up for the mailing list to stay informed.

Of course, you can test the OTHERS in the mail category and the utility category of downloads. I wasn't reccommending any module. Merely stating what I think drupal.org uses.
If you don't find a module that covers what you want you can always write it yourself, pay someone to write it for you or aid in the feature set of one of the current modules by posting a feature request in the issue queue of the modules you would like to see expanded.
Simplenews
Simplenews does allow anonymous users to subscribe to a newsletter with just their email. You only need to grant the anonymous user permission to subscribe. Out of the box it does not track names, location, gender or any of the other things you might like. But if it did I guess it wouldn't be too "simple" then. You may want to check out http://drupal.org/project/webform_simplenews and see if the module developer has gotten any further on the simplenews webform integration.
A list of some of the Drupal sites I have designed and/or developed can be viewed at motioncity.com
Bummer
I actually used the Mail Chimp module to integrate with Mail Chimp instead. This was probably the best route for me at the moment, but it's nice to know that SimpleNews has that feature. Thanks!
E-goi Synchronization
You can synchronize users or you can use external webforms. Use this module to sync users http://drupal.org/sandbox/E-goi/1110712 and their forms to add subscribers to your list - http://www.e-goi.com/platform/sign-up-forms-website-subscription/mc_doc_...
