it would be nice if there is a checkbox on the listing header with which all fields can be selected like "select all" for the administrator - usability

I agree. Select ALL and select NONE for each role would be nice future.

You would lose all your permission settings when you click on the checkbox. I can't imagine a use case where this would be useful.

If you want all permissions, then configure the Administrator role at admin/config/people/accounts
