The Drupal 6 version currently only works with the 6.x-2.x-dev branch of Embedded Media Field until #725940: Cannot redeclare provider files when enabling media: provider modules is resolved.

I am not sure with the latest 6.x-2.1 release, can we change from 2.x-dev to 2.1?

Yes, it's safe to upgrade to that using Media: YouTube. As always, backup your database first... ;)
