We just launched a new ubercart site here http://www.dandelionwood.co.uk - The site sells a wide variety of unusual gifts, small antiques and chic fashion accessories. We provided full end to end design, theming and development. Response from customers and the client have been great so far.
The theme is fusion + a heavily overridden and modified acquia prosper base. This is the third or fourth project using fusion and we've found development times for theming dramatically reduced using these.
The sites catalog pages are all generated with views and we deployed views display tabs for switching between grid and list (view all) mode with ajax (we created a nice custom throbber too!). A simple taxonomy structure is used for organising products into categories and taxonomy menu was used for the main menus and shopping by brand blocks.
