When I have a new assignment, I'd like the default to immediately be 0 (or 0 after the due date) so the overall grade reflects the missing assignment in the percentage.

I am not sure this was what you were looking for, but your issue seemed the closest match

In the last commit, I added a feature that provides a default grade form when adding grades for more than one user/assignment. You can fill in the default grade hit "apply default grade" to set all the grade listings to the default value. The grades can then be edited individually before saving the lot. Should work for notes, earned values/percentages, and exempt fields.
