I'm a n00b in ecommerce package so my opinion is not so authoritative.

I should say that producing of all possible product variation as nodes makes some kind of disorder. IMO producing it as revisions of single 'master' node can help to reduce the cases of unwanted subproduct nodes appearing and to 'enclose' this functionality from other modules.

Seems like a kludge to me. While I don't like seeing all the subproducts either, I don't think it would be right to shoehorn them the revision system. I think revisions need some improvements, and that could pull the rug out from under subproducts down the road. Try using ec_views to hide the subproducts from your lists. They still show up on the back end, but it's better.
