In the previous version of Mollom I was using (6.10), I had the option to enable text analysis and then present the CAPTCHA field if the webform submission included spammy content. In the current version, it appears I can only select between text analysis and CAPTCHA. Is there no support for having both enabled?

Textual analysis = Textual analysis with CAPTCHA backup which is exactly what you're wanting.

The fallback to a CAPTCHA happens always if Mollom is unsure.
