I wondered whether anyone used ecommerce on Drupal sites incorporating simple links to card processing facilities run by the likes of PayPal, Mals ecommerce, WuFoo etc rather than a Drupal add-on, or if indeed it is possible?

Both Drupal commerce and Ubercart integrate the payment flow so they can keep track of the order status. A simple link would not allow either package to know that a payment has been processed.
