I may have missed it, but I can't seem to find a way of changing how may images are displayed in the teaser view.

If you're running with the default settings, go to admin/build/views/edit/node_gallery_gallery_image_views#views-tab-page_2 and change the "Items to display".

Go to admin/settings/node_gallery/edit/node_gallery_gallery, click next, and change the "Number of Thumbnails to Display" setting.
