I upgraded a site from Drupal 6 to Drupal 7 with locale enabled. Each field's data was set to 'en' for the language. Then I disabled (and later uninstalled) locale module, since I did not need to it. When I did so, all the field content became missing on the site. The only thing that I could do to fix it (other than re-enabling locale), was to update the language to 'und' for the data in each field's database table one at a time.
The loss of all of your content's visibility when disabling locale is pretty serious.
