I would like to be able to create article pages without the time stamp on it. Is there a way that I can remove the date from these pages?

you can configure the articles display settings following the path Home » Administration » Structure » Content types. There, you should edit the article content type and change the display settings from the vertical tabs [see attached display-settings.jpg].
