i change drupal core date to persian, but didn't affect on availability calendar.

how i can change gregorian availability calendar to persian?

All of the functions that output the calendars are themeable and can be found in the file hotel_booking.theme.inc - any of these can be copied to your theme's template.php and renamed accordingly (eg from theme_hotel_booking_calendars_month to YOURTHEME_hotel_booking_calendars_month) and then edited as you see fit.
