I'm trying to add a field that I would like to remain private to a Field Collection and the option is not giving. Is it possible to add this feature to Field Collection?

I'm guessing this is the feature provided by Profile2? Would have been helpful to specify that. There is a good chance this should be handled on their end.

Can you describe your configuration? Which entity types, content types, fields, field collections.

I'm using Field Collection with the eRecruiter distribution profile. The fields are in a field collection in a Profile2 entity. I moved the select list from the Resume content type of the eRecruiter to inside of a field collection where the option to make the content private was no longer possible.

The ability to make fields private is a feature of the field permissions module. Unfortunately field collections isn't compatible with field permissions yet, but maybe someday.
