I'd like the checkout pane to display information from the user's webform submission, similar to the way uc attributes display details about a purchase.

If someone has done this, please let me know... otherwise i'm working on a patch now.

No one's done this, but you're not the first to ask! I'm marking as a duplicate of #1424516: Allow webform components to be shown at checkout along with attributes, we can continue there. Thanks.
