Will it be possible to resize to 100x100 square YouTube Thumbnails or is this created/dictated by YouTube??

the latest version of video_cck allows you to set the sizes of thumbnails. make sure to upgrade to the latest version, run update.php, and go to the field settings page.

as a caveat, this doesn't actually change the size of the thumbnail image itself. it just changes the display size of the image in the html. (for youtube, anyway -- some providers, such as revver, actually return properly sized images.)
