My User type only has "Groups audience" setup on it. I added custom Drupal fields to my user, then added those into the user/%uid override for Panels. (A standard thing to do in Panels.) Some of the fields would display on the overridden profile page, and not for others.
Finally after several hours, I went into Organic groups global permissions and to my surprise those non-related user fields were there. I remember hearing from a conference online about OG that a User could be a Group Type, but my users are not. So #1 these fields shouldn't show up in the list, and #2 their settings here shouldn't supersede other permissions throughout Drupal if those fields don't belong to a group type.
As a work-around, I added the non-member, member, and administrator member permissions to the custom User fields and they displayed for everyone.

rachel_norfolkI am seeing this same issue on two other websites, not using panels and using the latest released version of OG.
