I've tried installing 7.x-2.0-beta2 several times and cannot get it installed without the demo content. If I select Yes or No for demo store, I still get demo content created. Is this resolved in a dev release, or am I misunderstanding something fundamental?
I am installing on Pantheon after importing the 7.x-2.0-beta2 zip directly from d.o.

bojanz CreditAttribution: bojanz commentedIs it the same content?
"No demo store" does create two sample products and two sample categories to keep the screens from looking empty initially, not sure if this is what you mean.

bojanz CreditAttribution: bojanz commentedProbably not. Kickstart did the same thing in v1 as well.
It takes a few minutes to delete the two sample products, but not having them really makes the initial post-install experience worse, and we haven't designed the "blank slate" screens at all.

Is there anything else like this that I need to look for and undo / disable?

The alternative atm is to delete the node(s), then products then the taxonomy....
A "clean slate" button would be awesome... :-)

bojanz CreditAttribution: bojanz commentedThis is as far as we could go with the initial release.
Since the issue was first posted, I've managed to scale back the extend of the demo content on "no demo store", and it should be very minimal.
I'd gladly accept further suggestions, but I'm afraid most will have to wait for the next major release.
Not having any sample posts (which are deletable in a few clicks) would require "empty screens" to be designed for many parts of Kickstart, which is why the sample posts were created as a shortcut.
