What is "view mode" and what are the differences between "Diff standard", "Diff complete", "Tokens" etc.?

View modes are introduced by core ... it handles displays, please read some guidelines about that.
dunno what "Diff ..." means.

The only thing heartbeat does, is providing an entity which can be displayed as you want it. ... through displays. Heartbeat comes with 2 view modes: full message and message only. You could use this by enabling the message only like "show only the message field" and the other one, you show everything.

How that works is core, not heartbeat.
