If I created a patch file just for myself to use to remove media_youtube and media_vimeo would you foresee any problems this might cause?

At government and behind firewalls we don't really have a need for these modules and vimeo in particular has been a bit tricky when dealing with migrations as it sometimes overtakes the links.

Just wanted to make sure wouldn't cause any regressions if I removed them for our builds.

I don't think it will cause many problems. I would just recommend adding some logic to disable the "Add Video" widget setting (panels page setting) so users dont have a wierd experience trying to add a video they cannot.
