There are only Username & Password and Timezone setting enabled when you edit User Forms on DS.

Shouldn't it gather all the fields shown at user/%e/edit, not just 2 of them?

Did you choose a display? And the form stuff is limited. It's caused by restrictions of d7 core. Nothing we can do about it. Form alter is your friends in these cases...
