For now there seems to be no way of declaring a separate open graph (og:description) per language on a multilingual site. I would like it that when visitors share my.site/en, to get a different description than when they share my.site/fr

DamienMcKennaAre you talking about different strings for the front page / homepage or for interior pages? For the first option, this is possible today using the i18n_strings submodule of i18n, for the latter it's going to depend upon how translations are handled for your pages, e.g. Locale, EntityTranslation, etc, but these are already supported. If you want to have different fields in the UI for each enabled language, that's something entirely different and would lead to massive UI bloat. If you're thinking of something else, please provide further details of what exactly you're looking for.
