I'm wondering why the default "full page override" layout is Bryant instead of Boxton like every other view mode? Just seems like starting with a simple full page without any sidebars would be more useful generically?

This sounds like this is about Panopoly Pages and the "Content Page" content type. "Landing Pages" do default to "Boxton" and the user dashboard uses "Phelan".

This was just a choice made when panopoly_pages was first written. I don't think we can change this in the Panopoly 1.x dev cycle, because some people will be depending on the two column layout with the menu in the left column.

However, you can change the default layout with Features Override or create your own content types and make the default layout anything you choose!
