I'm sure I'm missing something here, but I've looked everywhere within the content types, and it only seems to let me set a date value that has 00 or 15 or 30 or 45 (tried all the widgets). Don't recall encountering this before.. How do I change this?

Sorry found it under "Date Entry" in edit field screen as Time increments. Perhaps it was in a place that was too obvious!
