I am working with node reference fields in different content types.
I have the 'add dialog' on in the field setting.

What I cannot find out is why on adding a reference, a dialogue screen appears, while with other content types I cannot get the dialog to appear. Instead a new screen opens when the user clicks on + Create new ***.

How can I make sure that the dialogue screen appears please?

Please see the attached screenshot of the dialogue screen that I expected to see with all content types on my site.

It's probably because of a javascript error ? Have you tried debuging your javascripts ?
