Make sure you have the requisite module - votingapi - and its enabled.
Then as you you said you can go into each content type - admin/content/types - and set the fivestar options for that type. It defaults to on which IMO it should defualt to off since I don't want to rate most content types - my preference.
Turn on 'rate content' access for your roles of choice.
Then you must view the node - fivestar does not show up on the teasers - and you can rate the content.
What threw me was that fivestar always shows my rating and I couldn't figure out how to see what other people had rated a node - I ended up setting up a view that allowed me to see the average rating - I'm not sure if there is another way to do this.
Another thing I'd like to see is fivestar support in comments. So users could look at a node content and then leave a comment with a rating instead of just rating the content. This would be more like amazon review of the content. So two modes - the current rate content mode and a comment/rate mode.
There is no settings section for Fivestar. It doesn't need one (yet). All settings for Fivestar are integrated as part of each content type. Go to admin/content/types/page for instance. Down the form you'll find the fivestar setting for that particular type.

There´s no settings section indeed, but you can set inside each node type if you want to allow the voting to that type.
I would like to know if anyone have solved this... I mean... I don´t know how to activate o deactivate all the options that this module seems to have.
I´ve setted for my page to have the voting panel above the nodes, and anon users are allowed to vote... but I cannot see the stars, or anything...
