Is there any documentation, tutorials etc that can help a non coder setup mailsystem. I want to use it with Simplenews/htmlmail/gmail to send themed/templated newsletters/mailings. I currently use smtpmail to send sitewide email. I cannot figure out how to get that chain to work!

See the HTML Mail project page and look at the list of links at the lower-right. One of them is labeled Read documentation.

After following that link, you will see a child page labeled Using HTML Mail together with SMTP Authentication Support.

That link contains a fairly complete, step-by-step, keystroke-by-keystroke, mouse-click-by-mouse-click walkthrough, with screenshots.

For advanced theming/templating, you're going to have to learn some code, I'm afraid. I'm not smart enough yet to make everything point-and-click. I do, however have some plans for improvements. See #1150140: Allow through-the-web editing of templates.
