Everytime I go and edit any of my node types, I have to *unclick* the "enable fivestar" each time. This is backwards, should default to off and I can turn it on when I want to keep it on ;-)

Agreed. It's off by default everywhere else. I think this was a small attempt to lower "Fivestar doesn't do anything!" requests :)
