I think it'd be lovely if you add some interface to control the theming of the email sent as well as TXT email.

You can currently modify the theme functions in template.php (see the handbook on phptemplate theming), but I do plan to do as you request at a later date. Unfortunately, I've got a few other higher priorities that have been occupying my time of late.
