There is nothing special in Simplenews that would prevent this.

Note that you are missing a - (needs to be node--simplenews.tpl.php) in your copied file name, not sure if that is a copy paste error or something else.

Or it might be that you need a node.tpl.php as well in your theme. Do you have one?
