Back in Drupal6, we used to enable the "Workflow Fields" module side by side with "Workflow"

That was acting as an extension which allowed more granular access control at field level, where as the workflow module permission system operates at node level.

I have contacted the author of "Workflow fields" (http://drupal.org/node/1339290)
But he is not having a plan to make a drupal 7 release, I know that many developers are not yet coping with the new entity api, or may have no more free time to re-engage in development activities nor the time resource.

Too bad that we cannot see these essential features in Drupal 7.
Many projects done in Drupal 6 cannot simply be migrated due to the lack of certain modules.

As for Graphviz module, some work is in place to migrate to drupal 7
