I realize the project's name is "override NODE options"

That said, with D7 and the whole entity craze a lot of important "content" is not necessarily a node anymore.

Are there any plans to abstract this to entities in general or is that better suited to another module?

This isn't on my roadmap for now, but if it were to happen then I think it would be a new module with a different name ("Override Entity Options" or similar) and all further development would be moved there.

This is what happened with https://www.drupal.org/project/nodequeue moving to https://www.drupal.org/project/entityqueue.
