I know this is not recommended but is it possible to completely uninstall 1.x and start over with 2.x? I have a development site in it's infancy. Is it as easy as manually removing all ds tables and installing 2.x?

Sure, just disabled and then uninstall via the modules page and reinstall the new version.

Thanks. Just wanted to make sure it didn't write to any other tables I didn't know about.
