Suffering from a little bit of inbox overload and preferring to schedule running of updates to once a month, with this in mind is it possible for the emails notifying of OS updates to be scheduled once a month or at other user defined timeline?

I you mean apticron, then you may want to remove it from /etc/cron.d/apticron and add its (modified) entry to /etc/crontab, with schedule you prefer.
