I would like to be able to control the visibility of the node's title field, but I don't see it as an option in the "Dependent" drop-down. Would adding this capability be possible?

Same here. I installed (and then uninstalled) the module for that reason alone.

I can understand why its required to be there, but being able to hide it and auto populate its value based on some other shown fields would be great.

As a workaround you could use the Title module and enable field replacement for the node type you want to be able to use Conditional fields on. Then the title field will be available as a regular field.
