It is quite annoying to not be able to view or edit existing advanced options.

You have to remove them and then add them again (if you remember what they were).

You actually can. It is just an amazingly non-intuitive UI. Just select the name of an existing advanced option in the dropdown and it will propagate the text field with the current value of the option. (and yes that should be better but I probably won't get around to it for a long time)
