I've installed forum_access and set up some permission on an existing forum to allow posting only for authenticated users, but anonymous users are still able to reply to a topic.
Should I create a new forum to have it working properly?

This is a known issue that's still waiting to be solved: http://drupal.org/node/123152

You can take away the global 'post comments' or 'post comments without approval' permissions from the anonymous user, but that may be too restrictive for you.
