I do not like that image assist upload images always to the gallery. I mean, why must user select a gallery to upload an image to a post?
They also appear after that in the gallery.
Is it not anyhow possible to JUST upload the images and use them in the post (blog or page), without displaying them in the gallery?

I guess, you're using the Image Gallery module and you have set the selection of a gallery as required field for new images. If you would make that optional, your users would not have to assign new images (via Image Assist) to a gallery. However, this has nothing to do with Image Assist, so I'm obliged to mark this issue by design.
