Each event we're creating, however, normally has different deadlines for when registration starts and when it ends. It would be great if this could be setup as a default value in the settings, but then is specified per-node as an override.

dwwI'm pretty sure the functionality you're looking for is exactly what the "Signup scheduler" module is for.
