I'm using the ajax gallery found at http://www.lokeshdhakar.com/projects/lightbox2 on the same node page as the fivestar code.

Example here : http://www.iancawthorne.co.uk/drupal/node/1 (time of posting, the fivestar part is not working)

Having one of the two included cancels the other to work, so there is a javascript conflict.

Is it possible to easily degrade the fivestar module to html manually? Or an alternative fix?

You'll have to update to the latest version of Fivestar before I can help you. The bug may have been fixed since the 1.7 version.
